If you've been to any Fidalgo Island Rotary events, meetings or fundraisers, you know that we have a good time. You've got to earn the nickname "The FUN Club," and we sure as heck have. One of the things that makes us the most fun is that we're truly like a family. Through the good times, bad times, joyous times and boring times, you can bet your fellow FIR members are going to be right there beside you, cheering you on. So when we lose one of our own, it makes it even harder. This month, we're wishing one of our own well as she heads off to new adventures - Tricia Sharp.

Tricia Sharp and her other half, Mike Hendon, have been an integral part of the Anacortes community for more than a decade. They're both active volunteers through Rotary, Shelter Box, the local library and much more; beyond that, they're fun-loving, supportive friends. So last week, FIR members and friends gathered at Village Pizza to say, "see you soon!" and celebrate these two awesome people! 
 
The party was a semi-surprise - Tricia and Mike were told to leave the evening open, but not where they were going or what they were doing. But in true Tricia fashion, she knew no party would be complete without Jello Shots! And ALSO, in true Tricia fashion, they were ECO-FRIENDLY Jello Shots! We had a blast shooting Jello out of orange and lime peels, writing notes and reminiscing on favorite memories. ECO-Friendly Jello Shot Recipe
 

10 Oranges

2 (3 ounce) Blue Raspberry flavored gelatin mix

2 cups boiling water

1 Bottle (4 Cups) of Pinnacle Whipped Vodka

 

  • Slice oranges in half crosswise, use a spoon to gently pull out the pulp from the rind. Place halves in a large dish, edges touching, to keep cups standing and upright.
  • Follow instructions on gelatin box.
    Stir Blue Raspberry gelatin mix with boiling water in a bowl, mixing until gelatin is completely dissolved. Use vodka as the replacement for the cool water part of the recipe. Stir vodka into gelatin. Pour gelatin mixture into orange peel cups. Refrigerate until set, 4 hours.
